Sundried Tomato Pesto with Mettrum Originals Hemp Seeds
You might think that making a sundried tomato pesto is hard but it’s the easiest thing ever. All you need to do is throw all the ingredients in a food processor and blitz until ingredients are incorporated. How easy is that?
This pesto is very versatile and you can use this recipe with pasta, gnocchi, chicken, white fish, or just spread on bread. You can also use this pesto as a marinade for meats and seafood!! Infusing meats with this amazing pesto will give you the flavor and culinary edge you’ve been searching for.
If your sundried tomatoes are too dry or very tough, as they are most of the time, you can soak them in hot water prior to adding them to the food processor (remembering to drain the water before adding).
We have used Mettrum Originals products in the past including our Morning Power Muffins and while we were making our Wellness Peace’s during the Lift Cannabis Expo, Cannabis Life Conference, and Hempfest in 2017. Ingredients for Sundried Tomato Pesto:
- 1 Cup Sundried Tomatoes
- 1/3 Cup Pecorino Romano or Parmesan Cheese
- 1/4 Cup Fresh Basil
- 1/4 Cup Mettrum Originals Hemp Seeds
- 1-3 Garlic Cloves
- 1/2 Cup Olive Oil (w/ 3-5ml Cannabis Oil / your prescribed dosage)
Directions for Sundried Tomato Pesto:
- In a food processor add all ingredients, except Olive Oil
- Turn on and slowly add the olive oil while food processor is running
- Once all ingredients are incorporated;
- Serve, Eat Well, and Be Happy
