Bacon Wrapped Chicken Breasts w/ Fresh Herbs
Who doesn’t like chicken (or, well, anything for that matter) wrapped in bacon? We know we do and we’re sure you do to 🙂
Wrapping your meats in bacon will give it that flavor and juiciness you re looking for. The bacon creates a natural casing to hold in the juices and creates a nice smoky flavor throughout the bacon wrapped chicken. You will “WOW” yourself with how easy it is to prepare this bacon wrapped chicken, if you can wrap bacon around chicken your good!!
It is best to use fresh herbs yet we know that it is difficult to keep herbs fresh. So what you can do is buy the herbs and cut them all up and mix with oil and freeze in ice cube trays. That way you will always have fresh herbs for the next time you make the bacon wrapped chicken.
When it comes to rubbing the herbs and mustard on the chicken, a freezer bag could make your life easier if you don’t want to touch the icky gooey chicken. Just throw the breasts and herb mixture in the bag and mix around
Ingredients for Bacon Wrapped Chicken
- 4 Chicken Breasts
- 1 Pound of Bacon
- 80 ml Dijon Mustard
- 1.5 Tbsp Rosemary
- 1 tsp Thyme
- 1.5 Tbsp Sage
- Sea Salt
- Ground Pepper
Directions for Bacon Wrapped Chicken
- Preheat oven to 375F
- Rinse chicken breasts under cool running water and set aside.
- Chop all herbs and add to Dijon mustard.
- Rub mustard and herbs on the chicken breast.
- Place three pieces of bacon on a cutting board.
- Place a chicken breast on top and roll bacon over
- Cook chicken for 20 minutes at 375F
- Check chicken with a cooking thermometer to ensure temperature is above 165F
Once your bacon wrapped chicken is done it is best to let it REST for 5-8 minutes before cutting into it. Resting allows the juices to settle and your chicken will remain juicy throughout. This gives you a little time to set the table and get the rest of your plate ready too.
